So the wife casually mentions last night that instead of a traditional Thanksgiving dinner, maybe this year we could make a turkey pot pie and by "we" she means "me".

So now I have to learn how to make a decent pot pie from scratch. Because buying a frozen one isn't going to meet spousal approval.

@GaryPoole The secret to a good pie crust is to use very cold fat:
Ingredients
* 1 ½ cups all-purpose flour
* 5 T shortening, chilled and cubed
* 4 T unsalted butter, chilled and cubed
* ½ t salt
* 3 T ice water
Steps
* Put flour, shortening, butter, and salt into a processor. Pulse a few times to lightly mix the ingredients. 

* Add ice water and mix until dough just starts to get crumbly.
* Transfer dough into a bowl and form into a ball. 

* Wrap dough in wax paper and chill for 30 minutes.
