Butter is part of the original recipe from buffalo...
When young would saute celery in the sauce as well...
The butter rounds the flavor of the vinegar and chili peppers...

For more heat.... Add some cayenne powder...

@InvaderGzim @FireMonkey @type181 Home-made buffalo sauce is really easy to make, and decadent.

And you can build off it, too, use fancier pepper, different acids/vinegar, but I like the plain-old so well that's usually what I make.

Also, covers up the bittersweet taste of mercury and heavy metals that tend to accumulate in the bodies of the wealthy and their minions.

(I'm not actually making that bit up - wealthy diets apparently include a lot of mercury and other bioaccumulative toxins)
