Having had some success with other gluten free recipes lately next week's fiesta de turkey brings up a rematch with one of the most challenging.
Gluten free yeast dinner rolls
One year we traveled with them too close to other warm dishes before baking and they rose too much, but tasted amazing. Last year we didn't travel and they were small and tough despite my best efforts.

@Liliki Don't know if you saw my zucchini Bread recipe. Hopefully this link works well. I haven't tried it with egg replacer but the GF version with this balance of almond to baking flour is the best yet! Big hit at the big Turkey Fry at work a couple weeks ago among everyone, GF or not.
