As someone who had used electric and gas stoves, I prefer gas. It heats up quicker and cools down quicker. You can also adjust the heat faster with gas.
Electric stoves do have the advantage of being user-serviceable. A burner dies, yank it out and put in a new one. So there's that.
We have an electric cooktop now, but I'd like to replace it with a gas one. But I can't afford the one I want. 🤷♀️

When you say electric stove, do you mean the coil resistance type?
If so you are correct.
But none of this is true with induction cooktops. They heat faster, and are much more controllable than Gas. By a lot. Also cheaper to use.
