I haven't yet tried making sourdough, but I used it on the rustic Italian bread I made today. It worked beautifully.

FYI, the F-737 is the model I bought.

I think your chef knife is the F-808? I have a cheap Imarku chef knife that's doing a perfectly good job, but when I get the itch to upgrade, this one looks really nice.
