If you want to try encrypted comms that are doing it right, try SimpleX Chat. A bunch of us here are using it.

XMPP still works, for sure. The group of us that's using SimpleX Chat Right now we're all on an XMPP server together that supports OMEMO encryption. But we moved over because this is easier and better.
@voltronic I've been using Openfire with Pidgin and the OTR plugin with encryption set to mandatory of late.
