Easy leek and cauliflower soup.

1 bag frozen sliced leeks
1 bag frozen cauliflower florets
3 or 4 pints of stock (vegetable or chicken)
Seasonings

In a very large pan, sweat the still frozen leeks over a very low heat with the lid on for 10 -15 minutes until soft and sweet.
Add the caulflower and enough stock to cover everything.

Bring to the boil then reduce the heat and simmer for 20 minutes.

Blend until smooth and adjust seasoning to taste.

Serve.
