@estherschindler The school lunch ladies at my polish Catholic school made pierogies every Sunday in the fall and winter and sold them by the dozen. In the 70s, my mom would order 10 dozen every Christmas, freeze them, and they would last until the summer.
But, like making tamales from scratch, they are labor intensive and time consuming.
As the population decreased and the elderly have passed on, there are fewer younger people willing to make them.
