It's for . πŸ˜‹ We made a double batch since some of us are . The smaller dishes use in place of the lasagna noodles. The grocery store was out of mozzarella so I bought mixed cheese but it will still be delicious.

After I took the first picture we realized there was a lot of sauce and cheese left so the eggplant got drowned in sauce and then covered in even more cheese. All are now happily bubbling away in the oven.

@Wbtphdjd Yes indeed. One of them, the eggplant I think, is Colby Jack. The other is a Mexican blend. Both are go-to cheeses in our home for various recipes.

OMG, I'm hungry now! 😍 πŸ˜‹ Great job accommodating for dietary needs, too. My mother is diabetic, and has learned to make some great dishes that fit her needs.

And oh yes, drowning in sauce and cheese is always the best!

@danielbsmith Oh I used to make eggplant lasagna and it was always a huge hit. People were like, "How come I can eat your lasagna without feeling so stuffed after?" I also sometimes layer some sliced portabello mushrooms in there yum.
