One meal I haven't had in a dog's age is some form of bibimbap. It's a Korean peasant dish cooked in a hot metal bowl using fresh local fare. My favourite local equivalent is the cazuela paisa, which uses local ingredients in a hot bowl, too.

Whatever the equivalent "farm-fresh" fare would be near you, that would be a dish I'd love to sample from you!

What do you love to make most, for company?

@MLClark My Default is cuban picadillo. I can make it in my sleep and if I am in a real good mood i will make cheese filled naan for it to be spooned in.

We just started our early harvest. Mostly Ramps, Nettles, mixed greens, or overwintered items. Frittatas with whatever we have on hand.

but now my goto "Greens" recipe is Tambuli .. goes good with everything.

The one comfort food that will make me close my eyes in bliss when I have a spoonful in my mouth, is apple pie

My mom made it for me during any special occasion, and even would over winter apples to use in a pie for my Birthday in january.

still warm slice of pie with a scoop of vanilla ice cream. That is my happy place

I'm also a Jan baby, so I'm guessing that with winter apple storage you're getting a wedge-cut apple experience. They're not as firm as the flat-cut pie varietals, but they have a filling texture that can't be beat! πŸ˜‹

I peel, quarter, core, and then slice, getting quarter-circle slices. par bake the bottom crust, fill the pie, and lay a crust on top

my mom had the crust down to an art, and i never figured out her secret.

I have only know the more traditionally pie. Everything else just pales in comparison.

The best pie crusts are made with the simplest range of ingredients. It's all in the amount of time mixing, the frigidity of the water, and its quantity. :)

If your mum parboiled the bottom crust, you definitely did a wedge slice. The flat cut from the apples creates a pie slice that you can hold in your hand, but the melt-in-your-mouth wedge-slice filling is a treat without equal.

@MLClark Pretty good, all things considered! Life has been fairly chaotic - my home got flooded a couple weeks ago by a roof leak during a heavy rainstorm, so I had to move - but it could've been a lot worse and (with a fair bit of help) I've just about got it all sorted.

How about you?

Hmm... well, this definitely isn't novel, but hard-fried eggs (add salt, pepper, dill, and paprika) as a sandwich on pan-fried toast, perhaps with a little mayonnaise (or if feeling fancy, pesto) is very tasty!

Perfect! I've been doing a fried egg sandwich as my daily meal as of late, so this is hitting ALL the right notes. Just got some paprika in on the action today!

Whoa, does that mean you're only eating one meal a day? If so, not sure how you do it... I would not last very long on that kind of diet, thanks to a lack of body fat and a super-fast metabolism.

Which is part of the reason why I always make sure I have several months of long-shelf-life food (and at least 3 weeks of drinking water) in reserve... otherwise even a short food shortage could be very dangerous for me.

OMAD just makes it easier to get "eating" out of the way in one go so I can pack more work into the day.

But it definitely also makes it easy to get tipsy on very little, when I do imbibe.

@MLClark LOL I think if I tried to eat enough calories for the day in one meal, my stomach would probably rupture.

I need to eat over (sometimes *significantly* over) 3000 calories a day on average just to maintain my weight.

I know some gym bros who do a 2MAD for similar reasons, spaced 4 to 6 hours apart, while others just make sure what they're eating is super energy dense.

But for those in training, OMAD taken after a workout and around 19 hours fasted can help to optimize training benefits via boosted HGH levels, so to each body its own maintenance needs! Glad you know yours.

@MLClark If you fry the toast in the same pan as the eggs using the same oil, the toast will suck up the all the bits of seasoning that came off the eggs when the oil wicks up into it... which ends up flavouring the bread, reducing oil wastage, and eliminating any reason to butter the bread.

The mayo or pesto definitely aren't necessary at all, as the bread usually ends up being plenty flavourful anyway, but they can make a very nice addition.
