If a one-pot recipe tells you to sauté your vege &/or protein in a pan first, I don't think it counts as a one-pot recipe.

When I look for one-pot recipes, I want the sort of thing where you can toss all the ingredients into a single pot & then cook it.

@Impious_Jade can't you just sautee them in the pot? That's what I usually do.

@Impious_Jade Definitely not a one pot unless it calls for sauté of said items in the same pot.

@Impious_Jade If you have an Instant Pot with the sauté function, it really does become a one-pot recipe. But if not, then I agree.

@Impious_Jade if I only have to wash one pot in the end, it’s a one pot recipe. For me, it’s all about the dirty dishes!
