He should sue the living shit out of the company. There's a reason team building events, even outdoor ones, go through commercial vendors - it transfers the risk and establishes the event host (and their insurance) as accountable for managing risk.
It's not team building to send people into the woods without a professional and at the mercy of the group. They are very lucky he isn't dead.
