I made sauerkraut this morning with red cabbage and carrots, along with salt and spices.

I have this nifty curing jar that my son got for me, with a water moat around the top lid so the contents don't need to be weighed down. But filling it usually means getting lots of cabbage etc in the moat and it's a pita to clean out. So I made a "funnel" of sorts, out of an aluminum pie pan. Sliced across the middle and folded the points down, which help hold it in place. Worked great!
