I have come up with a meatloaf formula that all of us (me, hubby, & son) like:
1# lean ground beef
2 eggs
3 slices bread
1/2 c diced onion
1/4 diced celery
1/4 c diced bell pepper
Cesaro seasoning
garlic powder
pepper
paprika
Tear bread into small pieces.
Mix with diced vegetables.
Season with spices (I don't measure these).
Beat eggs & add to bread/veggie mixture, mix well.
Add gr. beef, mix well.
Bake at 375 degrees for 1 hour in covered casserole dish.

I like to use thinly sliced leek to hold everything together instead of the eggs and bread. Mostly because when I cook something like that I'm usually cooking for our Thursday jam session and some of the people are gluten free. I break up the rings and mix them into the meat. They make a very good binder and add a nice onion flavor.
