I've invented the most amazing simple new comfort food dinner for myself :)

I'll have to write up the recipe, but in short it is tofu cubes breaded on corn meal, stir fried in olive oil, then adding shredded cabbage, which surprisingly simmers down to a creamy texture, then whatever other veggies I have at hand, and then lots of grated parmesan cheese on the top.

Sometimes I surprise myself.

Also, I grew up hating cabbage due to stinky boiled dinners every Sunday growing up with cabbage, potatoes and corned beef.

Then as an old man I discovered sauerkraut, kim chi, and then began trying cabbage in all sorts of things ;)

Me too! I absolutely love it.

And I think mine is good, because I gave a couple of mason jars of my recipe to a German friend, and he ate a whole jar at a sitting and asked for more :)

Oh and over rice. I forgot that, though I think any sort of pasta would work as well :)
