I remember it being in the news during a major famine so looked it up.
I was taught in Home Ec in the early to mid 70s that it is an excellent meat substitute. With the price ofmeat & beef especially atm this is good to know!

Thank you for the info about the red potato (my daughter's fav potato). I'm allergic to bananas so need to find other sources of potassium. I love potatoes.😋
