I made these cookies last night and they are GF, healthy and delicious. I modified this recipe here:

My mods were:
1C Oat flour (take old fashioned oats, put them in blender/food processor- viola! Oat Flour)
1/4 C Tapioca flour (Arrowroot could be used instead)
2tsp. of vanilla extract
I used granulated swerve for the sugar.
These taste like little cakes disguised as cookies.
