So I found a great, super-fast recipe for Butter Beans in Vodka Sauce. Open, drain, rinse and toss two cans of butter beans into a pan, pour in a bottle of vodka sauce, simmer, and serve with grated parmesan. My Instacart shopper replaced the two cans of beans with a pound of dried beans. That extends preparation of this recipe from under five minutes to approximately 24 hours.

FML.

I'm gonna bite the bullet and try a quick soak on the beans. I figure if I start now, I *may* have softened beans in about two hours. And if they're not softened by then, I can always order a pizza....

I deferred on the beans and had pizza. I'm soaking them overnight tonight for dinner on Wednesday.
