Whoever told me to switch to peanut oil for roasting because it has higher smoke point, is my hero.
Not only is my apartment NOT filled with smoke after 3 hrs of roasting cauliflower, summer squash & Hubbard squash, it smells divine.
Additionally, the slight peanut flavor it imparts is delicious. The good oil is pricy but worth every penny.
Another lesson learned on #CoSo.
