Just an inexpensive cooking thermometer laying in the pan. A laser thermometer works nicely too but this setup is better because you can keep an eye on it and do other things with hands free.

@DPotatoesOBrien @An_Seabhac agree 100%. For a year I used a $6 Amazon barista thermometer in a standard electric kettle. I got so used to it I could hear when it reached 165°. The fancy kettle was a total splurge but we’ll worth $60. It will reach a temp and hold it there.
