What cooking gadget do you use, that others may not know about, that's been a lifesaver/timesaver for you more times than you can count?

I'll start with: this silly looking thing that peels garlic in a second

I use a lot of garlic in my cooking, but smashing, then peeling took up so much time. I delegate that task, but with this thing, there's much less bitching 😂

I'd never heard of these until it came with another appliance, so maybe you haven't either?
