Hey CoSo,

any guesses on the historical connection between cheese and hardcover ?

How about books and underwear?

^^
OK, I won't tease you no more 😃

So, here's a very interesting thread on the connection (speculative, yet likely) btw and cheese, underwear, glasses and more

@artemis

Maybe use paper for the outer layer for cheese.

Underwear ??? 🤔

@99reasons4truth

i posted the answer... you'll see how you were almost close :--)

@artemis *hyperventilates* i'm in another industry now but it never leaves you and i miss... omg do i spot a fellow (former or current) cheesemonger?!

@artemis omg *gasps* so rare to find another out in the wild.
I know you know your charcuterie too then, you must.
Broke a personal rule and had some iberico de bellota recently😍
i used to order from d'artganan back in my senior position, that caught my eye hah

@luxsit

lolol, that's really funy...
Hah, can't top that Iberico.
What's the wine to go w/it?

@artemis without looking*
I was sort of mentored? A suburb right outside of DC off the metro, the owner started it before cheese became more of a thing in the US. My boss hailed from Murray's in NYC but there were about 5 cheesemongers and we were just flung into it. We had to past routine tests on cheese/wine/charcutier but it was a lot and felt excessive for a local store but they've done well, mentioned on some national lists. But there's only so far you could go with that place. I diverted

@artemis It's not me, but I modeled mine after hers:

I was very fortunate. One of those rare experiences where it was an industry not yet appreciated here, I was put in charge of a lot of things bc it was all so new;even the owner was lost. A rare, tiny sliver of a window where you can get away with that sort of thing
The industry got more popular in the area and the owner expanded, it isn't the same.
crisped speck+ langres chalancey (ripened) + effie's (cocoa)
I promise

@luxsit

there's poetry in what you say .. about the tiny sliver of a window in a complicated yet charming world. Oh, that's fancy menu :-) You could write a book, then a screenplay, then a movie :-)

Very pretty plates ! Tx for sharing! Now you inspire me. It's fun to create beauty that tastes good :--)

@artemis not always fancy... we carried from laubscher <1yo old cheddar. than when brabander's black betty was super limited we we're one of the few dozen initially that got it... mmmmm

mandolins make it happen, is what i'll say 😜 and lyres for what they can handle. but you likely already know this.

@luxsit
LOL, I only know about the lyre's musical tones 🤣

@artemis Google "cheese lyres," you get some beautiful cuts out of those puppies
