I was sort of mentored? A suburb right outside of DC off the metro, the owner started it before cheese became more of a thing in the US. My boss hailed from Murray's in NYC but there were about 5 cheesemongers and we were just flung into it. We had to past routine tests on cheese/wine/charcutier but it was a lot and felt excessive for a local store but they've done well, mentioned on some national lists. But there's only so far you could go with that place. I diverted

I was very fortunate. One of those rare experiences where it was an industry not yet appreciated here, I was put in charge of a lot of things bc it was all so new;even the owner was lost. A rare, tiny sliver of a window where you can get away with that sort of thing
The industry got more popular in the area and the owner expanded, it isn't the same.

@artemis not always fancy... we carried from laubscher <1yo old cheddar. than when brabander's black betty was super limited we we're one of the few dozen initially that got it... mmmmm
mandolins make it happen, is what i'll say 😜 and lyres for what they can handle. but you likely already know this.
