Holy hell I’m going to feel the shoveling in my arm & shoulder tomorrow. Hard to shovel when the wind squalls everything right back in your facs. Big drifts in front of our garages. Had to park on side section & shovel then sweep before putting car in garage.

If it wasn’t as windy we’d have stayed longer than 5 minutes. There was also a big line to go sit on the carved ice bench for a photo opp.

There were vibrant sun dogs this morning. They kept distracting me on my drive to work. Wish I could have found somewhere to pull over & take a decent pic but was already running late and it was -4 so nope.

Here’s the recipe from what I remember doing. We used a beef barbacoa taco seasoning packet and it was pretty tasty. I dislike how some enchiladas have rice in them as filler and since I don’t eat rice I enjoyed making these.

Sister comes home later tonight so I gave Piper catnip. I think she’s happy.
