Easy bean salad
1 can mixed beans drained
2 chopped apples 🍎
1 or 2 cups chopped cucumber 🥒 *
1/2 red pepper
1/2 yellow pepper
1/2 chopped onion 🧅
1 carrot grated 🥕
1/4 cup olive or other salad oil
1/4 cup apple cider vinegar

Throw together - keep refrigerated, eat within 3 days
