It amazes me how Marvel/Disney is struggling with Blade.
Just make a Jon Wick movie with vampires, it's not that hard.

As a standalone movie that is absolutely true.
But the Marvel movies interconnect and because there are and have been changes in the larger story, Blade has been getting banged around a good bit.
On top of that, the original scripts were not deemed to be good enough.
Any fool can write a story, but a good story is a lot of work even for the best writers.
