Pigs relentlessly root forward as they eat, as opposed to the backwards scratching of chickens and turkeys. This is why the Pa Dutch tradition is to eat pork & sauerkraut on New Year’s Day. Not only is it considered good luck but, superstition has it, the green cabbage is a sign of money & good fortune and the “rooting forward” a sign of moving forward and progress.
