In order to make my life easier and to make sure there are any meals on hand for mom if I’m away, I’m trying to do advance meal prep. Tonight, I’m making a huge stir fry for dinner, and it should give 1-2 leftover meals.
I also plan to make a batch of keto brownies in a muffin pan so we can freeze them and eat measured amounts and stay on our diet. In order to make them in the muffin pan, I turn the heat down to 325° F and then bake for 18 minutes in order to keep them from being burnt on the edges and wet in the middle.
