In my house Saturday is list night - dinners for the next week and shopping

What are your easy(ish) homemade meals? I need inspiration 🤪

Chicken enchiladas

Deli chicken slices.
Rice cooked (I use cauliflower rice) and then mixed with garlic and cumin
Enchilada sauce
Cheese

Cheese goes on chicken slice, then a scoop of rice mixture.
Roll and put in oven pan/dish. When dish filled with rolls (messy rolls too, doesn’t matter)…pour on enchilada sauce.
Bake til you think it’s done. 30 mins? 400°?
Slight browning.

Sounds like something I would enjoy, but I'm not so sure about my kids🙈. Is it anything like a chili?🤔

@TheCuriousWoodworker It’s very similar to what I would consider chili, but chili varies a lot depending on where you live. The majority of it is ground beef and beans.

@TheCuriousWoodworker Baked salmon with garlic anchovy butter: mince garlic and anchovy and mix into softened butter. Smear on salmon filet and bake at 350 degrees F for 20-25 minutes. Serve w rice and steamed broccolini. [Protip: Make extra butter, it’s great on everything.]

@AmserJ I've tried incorporating anchovies into meals a few times....I find them too salty. How much/ many do you normally use?

@TheCuriousWoodworker you can use unsalted butter. I usually use 2-3 anchovies per 1/2 stick of butter, but you can use less.
