So I am so not a fan of black-eyed peas, but my Mom-in-law has strongly encouraged we eat them every Jan 1st, part of her family tradition.
Now Im working on making things that are easy for her and Dad to easily unfreeze, heat up that I deliver every couple of weeks and last week I tried from scratch using my Instant Pot and she called me the next day ti say they were the Best sheβd ever eaten πππ
Recipe for any who want:
Rinsed/covered by 2 inches of water for an initial setting of 10 mins pressure cook in the instant pot,
Rinsed/drained again
covered with 1-2 inches of free range chicken broth
Salt/pepper and Ms Dash Garlic and Herb seasoning to taste and stir
Set another 10 mins of pressure cooking
Stir and any additional salt/seasoning to taste
Putting in the grocery order now to give her a double batch next time π
