I am going to relax for a while today. Nathan, my little old cocker spaniel with sundowners, had a bad morning, which means I had a bad morning. The meds we give him usually work, but not on my day to sleep in. 😖

Our new chocolate pound cake flew off the table this weekend, but I couldn’t sell a cheesecake to save my life, even though everyone loved it. We have to make them smaller.

Another big baking day followed by delivery (4 hours away). I now have to wear compression socks because I’ve been pushing myself too hard. 8 more pies, then the baking is done for a few days!

Our coconut cake can be a layer cake, a sheet cake, and cupcakes! We use organic coconut, coconut milk, and Bacardi white rum (in the Swiss buttercream icing)! This particular cake skipped the rum, per request, and the icing was still delicious. Also, it’s really hard to pipe onto toasted coconut, and my piping skills are pretty basic to start with 😬 www.mommomsbakery.com
