This is the Swiss rum buttercream icing I made today for our coconut cakes. Iโve lost my jam mojo, but I got this batch to work well enough. You have to be looking for the flaw to notice it. Once I get my mojo back, Iโll have to never go long periods of time again without making it! Itโs so finicky!!
This is one of the 4 cakes I made for a new customer today, and Iโm always so worried when I drop cakes off (Iโm slightly less worried about pies, but only slightly). The thing about baking is that you never know for sure how something turned out until you cut into the final product, which I canโt do. So many things can go wrong!!! So many!! I really hope they loved the cakes.
I baked 25 pies today. We have a big event tomorrow (Saturday), and we have no idea if weโre bringing too much or not enough. 25 pies, 5 hummingbird cakes, 6 cheesecakes, and 13 small boxes of chocolate amaretto cookies. ๐คทโโ๏ธ Itโs 8 hours, weโll cut some of that up for samples (sampling is 4 hours long), and about 1,000 people bought tickets to attend.
