This is the Swiss rum buttercream icing I made today for our coconut cakes. I’ve lost my jam mojo, but I got this batch to work well enough. You have to be looking for the flaw to notice it. Once I get my mojo back, I’ll have to never go long periods of time again without making it! It’s so finicky!!
