I baked 25 pies today. We have a big event tomorrow (Saturday), and we have no idea if we’re bringing too much or not enough. 25 pies, 5 hummingbird cakes, 6 cheesecakes, and 13 small boxes of chocolate amaretto cookies. 🤷♀️ It’s 8 hours, we’ll cut some of that up for samples (sampling is 4 hours long), and about 1,000 people bought tickets to attend.
@see_the_sus Practice!! Also, I made the pie dough a couple weeks ago and froze it, and I rolled out all the pie tins (bottom crust) over the last couple of days. So, today I made filling, rolled out the top crusts, and baked. Also, 5 of them were galettes I put together yesterday and just popped them in the oven from the freezer. Bakeries rely on freezers as much as ovens. No one person can make 25 pies start to finish in one day. Also, I make filling for 4 at a time in a big bowl.
