Great cooking thing: use champagne instead of water in your pancake batter. Make them about a quarter of the size you think you would make a pancake though, okay?
@singlemaltgirl oh yeah…done properly the resulting pancake is the same dimensions as a hockey puck made of clouds. You need to do this VERY quickly.

@singlemaltgirl I know, I used to make these goddamn things at a restaurant for brunch haha! *our* regular human pancake recipes are good for about ?20 cakes?. Try doing dry and wet ingredients for about a quarter batch (remember, these things get BIG), you’ll get four cakes and a bunch of extra champagne which I recommend you make Shirley temples but it’s half champagne instead of gingerale
@LnzyHou yeah, it makes a super fluffy pancake because it’s got insane amount of extra carbon dioxide plus alcohol in it.

would you still let them sit for an hour before making your pancakes or would you put them on the griddle right away?
