It's a regular pancake batter but with some of the milk swapped out for 0% fat greek strained yoghurt which reacts more vigorously with the baking soda.

But then the big trick is that these *two* pancakes are actually from a mix which should make 6 to 8, so they're cooked much longer (5 minutes each side) over a much lower heat, in order to not burn them.

They come out a good inch thick!
