It's the most delicious cream ever created.
Essentially, it's heat treated heavy cream which as it cools goes *very* thick and gets a crust (the clots) on the top. It's a preservation technique which just happens to be utterly delicious. Made famous by the Devon/Cornish Cream Tea.

Doesn't the clotting process essentially pasteurize it?
