I just put some food in the oven...

Continuing my empanada journey, I cooked some onion, carrot, celery and red pepper, then added some chicken stock and an old chicken gravy pack I found in the fridge and cooked it down a ways. Then I added frozen peas, broccoli and cauliflower to the mix. When I got it back to a simmer I added some poached chicken and brpwned mushrooms and kept cooking it down to a pretty thick gravy.

I used store bought pie dough and wrapped some of the mix in a 6" circle of dough I cut out with a pan lid and pinched it shut as best I could. It was messy. Then an egg wash and into the oven. I'm pretty sure it will all just blow up out of the dough and be a tragic mess...

A few more minutes to go.
