Cooking in a crock pot or slow cooker will usually turn large cuts of meat into delicious and tender morsels. But there is something missing – the crispness of meat exposed to heat. Roasting in an oven or barbeque helps provide that.

Recently watched a chef video that said the greatest failing of crock pot cooking is to put meat into pot without searing. He’s absolutely right. Nothing duplicates that seared flavoring. He prefers large stockpot which can be watched easier.
