Considering switching vets. I put in an online pharmacy request for my cat’s prescription food EIGHT DAYS AGO and they haven’t approved it yet. I even called them today and it still isn’t done.

That is ridiculous. Ask around and get references for another vet. And after you switch, make sure the first vet knows why!
