John Candy and Steve Martin are comedic royalty, and the time they shared on screen (there was supposed to be more, BTW) may never be matched. There's something about comedians that came out of that late 70's, early 80's era that today's people just don't match. It's the nuance. Timing. There's a certain refinement to the craft that is just missing with actor-comedians today. Comedy is best served when you're not trying to generate laughs every other line. It needs balance.
