Any of my #baking people have a good wheat flour that they recommend. I've been having good luck with some TAM 105 from Barton Springs Mill in Texas but interested in trying others. I've used King Arthur whole wheat and that is my only comparison so far.
@Siriusfarm I use the WW flour from our local bagel maker because they grind their own flour. Here's their page about that: https://www.thebagelmill.com/about Hopefully they can mail to you. You might have to call and ask if they'll mail to you.
