Counting down to pizza day on Saturday. Started the dough- 7.5 pounds of it!- and finished the ingredient acquisition. Probably going to have to adjust the hydration later. Put some chicken in a mix of herbs, olive oil, minced onion, garlic paste, lemon zest, pepper and lemon juice. Oh and some very concentrated broth.

Tomorrow is going to involve a lot of prep work. Cutting veg, shredding cheese, prepping the dough, very gently baking the chicken, and whatever other tasks arise.
