Chicken just went into the oven to roast for about 3 hours. Stuffed with half an orange, thyme, & garlic with garlic & butter under skin. Salt, pepper, olive oil & smoked paprika on the outside. Resting on a bed of red onion rings with thyme & chicken broth. Will baste every 20 minutes.
