I predict I will be making vast quantities of pesto tomorrow. I just harvested my basil crop

Pine nuts are way too expensive for my budget so I'll be using walnuts.

@NorthernInvader

Do you also freeze some in oil in ice cube trays for when you need basil in dishes? I haven't done it in a while, but it was so helpful when I did (just don't use the oil on a hot pan lol)

@ExecutiveFunction404 No, I should but it would mostly be Pizzas and I can use some Pesto for that, also I don't have any ice cube trays πŸ˜†

@NorthernInvader

Ahhhhh, I use basil in many sauces & dinners, so it worked out great for me. And it lasts so long in the freezer.

I recommended ice cube trays bc they're super cheap (like less than a dollar, usually). Most people don't use them for ice anymore & most people wouldn't care to use silicone molds like me lol

@ExecutiveFunction404 in reality, I'm 75, widowed, and losing my appetite and taste, so, even though i trained as a chef back in the '60s I really don't do much anymore other than basic stuff.

@NorthernInvader

I truly hate it, but I have to do it. My adhd makes food (and pretty much every required daily activity) a chore that *has* to be done every day & imagine how much more time I'd have if I didn't have to do these annoying daily things to keep myself alive & kicking πŸ˜‚

Therefore, in order to enjoy it, I have to cook either something amazing I've made in the very distant past or something new or exotic. I even hate ordering food here bc it's the same 5 types of restaurants.

@ExecutiveFunction404 I get it but i'm just so damned tired now I can only seldom bring myself to do something different. That and declining taste, smell, arthritis in my hands it's too much for me. This will b my last year growing food, It's too much work and I don't have the energy for it now, never mind next year. I'll be turning my raised beds into just wildflower gardens for the pollinators. I'll still grow garlic and my herbs as that doesn't take any work.

@bluesbaby I might try that too as i have a small bag of unsalted ones.

@bluesbaby @NorthernInvader I like using other nuts besides pine nuts anyway, because they can be so bitter (that's my job). Pecans can bring a little of that tannic bitterness, but I've used everything including peanuts.

@bluesbaby @NorthernInvader Sorry. Meant to preface that with "Yes! Cashews are great in a pesto!"
