Frankly, you don't. 😕
There's no light theme officially, app or web interface.
BUT, if you use a browser w/ the right extensions, you can make a light theme, & a narrow enough display on a browser reverts to the mobile interface.
You can use the method @MrGoat devised by viewing his profile & following the directions in the pinned thread about Dark Reader.

@FernLovebond @MrGoat Thanks! Mobile app user here, so it sounds like I'm just not realistically gonna be able to use CS until they get a normal accessibility theme. Thanks again though!

What Goat says is true. I don't have the option or inclination to invest hours & hours poring over my previous posts from before the light theme was available and make addendum posts. (You replied to a post I made in November.)
Just go to the options and select the recently-added light theme, and if you want to alter the font size, make sure your system font is the right size & select the option to "Use system font." You should be all set.
