Today was a good haul for us in the food bank and with others generosity I am able to take all of the things we got and supplemented the rest to make enough for a family dinner to feed nine! First we are doing a whole roasted chicken over sweet potatoes, carrots, and leeks

So I first brined the chicken all day and in salt with garlic and lemon and fresh herbs from the garden I cut up and peeled all the veg and tossed it in a bit of melted butter and olive oil with rosemary and thyme and then I made some lemon rice and am making a compound butter for the chicken and I even got four russet potatoes so I’m gonna make mashed potatoes too! (Kidlets request)

Got the compound butter made up with parsley, rosemary, thyme and lemon zest with salt and then stuffed it under the skin and am about to throw it in the oven!
