Got some mushrooms from a food bank today and decided to make some mushroom soup! I first started by caramelizing some onions in butter and garlic and then added in more garlic and mushrooms and some olive oil, and cooked that down until it was roasted mushrooms!

Then I added in some mushroom stock I had accidentally gotten instead of beef stock once and fresh rosemary and thyme from my leftover herb garden cooked that for an hour before using the immersion blender to blend almost all the mushrooms and added in a cup of half and half and some grated parm I had and a splash of red wine vinegar and tada!
