I cook mixed beans at least once a week to have in the fridge for meals.
Today was one of the rare days where they turned out pretty.

I usually mix my own blend of every type the store has.
But this is just a cheap bag of soup beans from ALDI.

@Wbtphdjd I cook them plain after an overnight soaking of the dried beans.

My most often heat-up for a side dish:
2 heaping tablespoons of the cooked beans mixed with one big tablespoon of salsa.
