@Museek When I lived down in San Jose, we had an excellent Thai place less than a mile away. We'd order once a week, and got their Tom Kha Gai "Thai Hot".
Once they got to know us, they made it *actually* Thai Hot, not toned down for amateurs. I can still feel the burn! @JasonStiff

It’s nice when they do that. We do the same .. got to know them because we would speak Thai.. my daughter was raised in Thailand the first 8 years of her life so she spoke perfect Thai
Thai food is the best..

@kay_dub @JasonStiff here is a pic..of homemade Tom kha. I’ll make chicken ahead of time in the pressure cooker and take it off of the bone, using the broth .. it’s very easy and delicious
@JasonStiff Excellent! We have a Thai place here in the boonies. Amazingly, the food was excellent. Ends up, the ladies who own it are the daughters of one of the chefs at our old favorite place hours south.
When I asked for something Thai Hot, she said "do you want it Thai Hot, or the spicier version from our Provence?" 😳 I just went with Thai Hot, which was at my limit. @Museek

Jambalaya is good!
I like to make thai soup regularly .. that and clam chowder. both are delicious and easy to make from scratch.
And with the Thai soup I just wing it. We used to live in Thailand and so learned to make Tom Kha Gai or Tom Yum Goong
Tom Kha is coconut milk soup with Chicken (gai) but you can make it with a can of salmon (plah) if you're in a hurry.
