Used to make green chili with fresh roasted hatch chilis & pork butt every fall in Denver. The fragrance of roasting peppers on every corner was intoxicating.
Some years they were so hot, they burned out your gizzard. Made huge batches then froze for all winter.
Have lost the ability to “process” that level of heat as I get older. 🔥🔥🔥
